the mint sorbet it’s a dessert with a fresh spoon, digestive and thirst-quenching, prepared with fresh mint leaves. An original variation of the classic lemon sorbet, ideal for conclude a summer meal or to enjoy for a break on the hottest days. To do this we will use one natural syrup, made from fresh mint, water and sugar, to which we add lemon juice and zest. A simple recipe and without ice cream maker, to prepare the day before: once the syrup has been filtered, the sorbet should rest in freezer for several hours and stir occasionally, before obtaining the right consistency. Here are the steps to make it delicious and scented.

Wash the mint leaves and set them aside (1). Put the water, sugar, salt, lemon zest and mint in a saucepan. Simmer over low heat and cook the syrup 5 minutes from the boil. Once ready, let it cool well. Strain the syrup, add it to the lemon juice and mix. Pour the liquid into an airtight steel or glass container and leave in the freezer for 3 hours. Take the tray out of the freezer and break the ice crystals with the tines of the fork and stir (2). Return to freezer for 3 hours and mix again. Then let it sit for 12 hours. Your mint sorbet is ready to serve (3).

Advice

For speed up preparation you can make mint sorbet with the ice cream maker: pour the mixture into the ice cream maker and leave to stir for about 40 minutes. Then keep in the freezer until ready to serve.

If you want a more intense spearmint sorbet, you can add a little food coloring, to be dissolved in water during the preparation of the syrup.

You can decorate the mint sorbet with chopped almonds or with del dark chocolate flakes.

Also try mint ice cream, made from milk, mint syrup, crème fraîche and carob flour. Ideal as a summer dessert.

You can keep mint sorbet in the freezer for up to 5 days, in an airtight container.
