Making monkfish in tomato sauce is easy. First, thoroughly rinse and dry the monkfish steaks. Finely chop the garlic clove with the rosemary, marjoram and chilli. Pass a slice of fish in the mince so that it remains well covered.


Then repeat the operation with the remaining slices, gradually arranging them on a plate. In a large pan heat 3-4 tablespoons of oil, lay the slices on them and brown them evenly, turning them very gently. Sprinkle with the wine and let it evaporate.


Add the tomato pulp and cook for 10-15 minutes, over medium heat, adding a little hot broth if necessary. At the end of cooking the sauce should be medium dense: not too narrow but not excessively liquid. Then adjust the salt and pepper, sprinkle with chopped parsley and serve the monkfish with tomato sauce.
