How to prepare: Non-cooked roll with chocolate, candied cherries and pistachios


First, prepare the filling of the no-bake chocolate roll: in a bowl, mix the cream cheese with the vanilla seeds, coconut, chopped pistachios and quartered candied cherries. Work with a spatula until you get a homogeneous and consistent cream. Place in the refrigerator.


Collect the biscuits and pistachios in the mixer. Chop everything until you get a very fine powder. Add the melted butter at room temperature, the sugar and the unsweetened cocoa. Operate the mixer again to mix, pouring the cold milk slowly. You will need to obtain a firm and “mouldable” compound.


Transfer it to a sheet of parchment paper and, with your hands, compact it to form a dough. Roll it out between two sheets of parchment paper, with a rolling pin, to obtain a rectangle with a thickness of about 5 mm.


Arrange the filling in the center, leaving a free edge all around of about 1 cm. Roll up the roll starting from the short side, always helping yourself with the parchment paper. Let it cool in the refrigerator for 3 hours wrapped in cling film, taking care to put the closure side down.
