Separate the yolks from the whites. Put the egg yolks in a bowl with the sugar and whisk them until you get a frothy mixture. Collect the zest and juice from the oranges and pass it through a sieve, so as to remove all residues and seeds. Add the juice and zest to the egg yolks whisked with the sugar, stirring from bottom to top to avoid breaking up the mixture. Gradually add the sifted flour (1) and the baking powder, continuing to mix from bottom to top.

Add the melted butter to the double boiler. Beat the egg whites until stiff and add them little by little, always mixing the ingredients gently to keep the mixture light and well whipped. Butter and flour a donut mold and pour the mixture (2). Bake in a preheated oven at 170 ° C for 30 minutes. Take out of the oven after testing the toothpick to make sure the cake is well cooked inside as well.
