Prepare the batter: in a bowl mix the sifted flour, sugar and a pinch of salt, shell an egg and beat everything carefully with a whisk. Add a tablespoon of oil and the milk.


Add a teaspoon of sifted yeast and mix with a whisk. Cover and leave to rest for 2 hours at room temperature. In a hot non-stick frying pan, melt a little butter and pour a ladle of batter into it, letting it spread out into a disc.


Cook the pancake on both sides without letting it brown too much, turning it with a spatula. Continue until the batter runs out. Serve the pancakes hot with various syrups of maple, apple, blueberry, or with fluid fruit jellies.
