St. Patrick’s Day is approaching and I have decided to make pancakes. A typical sweet to celebrate the most joyful day in Ireland when in its streets are mixed in equal parts two colors, the Irish green and black Guinness. The specific date of exaltation of the pancake is called Pancakes’ Day, Pancake Tuesday or Shrove Day and usually coincides with Shrove Tuesday, the day before Ash Wednesday.

Ingredients For Irish Pancakes
- 350 g. common wheat flour 00
- 2 teaspoons of baking powder (6 g.)
- 4 eggs
- 80 g. unsalted butter
- 1 pinch of salt (3 g.)
- 100 g. icing sugar
- 320 ml. whole milk
- 1 tablespoon of vanilla essence (10 ml.)
- 1 pinch of ground cinnamon (3 g.)
- To accompany: nuts, strawberry jam, liquid chocolate, maple syrup, whipped cream …
Preparation of the pancake batter

Sift the flour, yeast and salt in a large bowl and make a well in the center. Beat the eggs with the milk, cinnamon and sugar until the mixture becomes clear.

Add the previous mixture to the bowl and mix with a whisk or an electric mixer the previous mixture, little by little, we must have a smooth paste without lumps.

Melt the butter in the microwave at low temperature for one minute. Finish melting by mixing with a fork or a whisk and add it to the dough with the tablespoon of vanilla essence.

The great trick of good pancakes is to let the dough rest for an hour in the refrigerator. This way the yeast will act and they will be very fluffy.

Although if you are in a hurry logically you can also get hands to the dough and prepare them at the moment. If you have let the dough rest we return to give a touch of mixer or rods before making the pancakes.
Preparation of the Irish pancakesHeat a small frying pan until very hot and then lower the heat to medium. Lightly grease with a little butter and then pour enough batter to cover the bottom of the pan. Always tilting the pan so that the mixture spreads evenly.

Once in the pan the pancake will start to cook at once, we will have it about 15-20 seconds at medium temperature. When the edges begin to fold upwards (because they are toasted) it is the moment to turn it over with a fork or a spatula. If you are not good with the fork you can use the trick of turning the pancake with a plate as if it were a potato omelet, as you get practice it will no longer be necessary.

When you turn the pancake over, if the toast is not golden brown, it will be due to a lack of egg. You can take the opportunity to add another one to the cream. Brown on both sides and pile them on a large plate. Continue making the pancakes until the cream is finished. And there you have them as appetizing as in the photo.
