In our recipe, we made the dough with eggs, sugar, flour, starch, butter, baking powder and grated lemon zest, then enriched with the addition of nectarine peaches cut into small pieces. Wash the peaches, remove the pit (1) and cut them into small pieces. Separate the yolks from the whites and whip the yolks with the sugar until the mixture is light and fluffy (2). Add the softened butter in small pieces and the grated lemon zest and mix well. Add the sifted flour, starch and baking powder (3) and mix them with the rest using a spatula.

Beat the egg whites until stiff and add them little by little to the bowl, mixing in upward movements (4). Also add the chopped peaches and mix them with the rest: if the dough is too thick, add a little milk. Pour the preparation into the buttered and floured 26 cm diameter donut mold (5) and bake in an oven preheated to 180 ° C for about 40 minutes. Once ready, let it cool before unmolding it. Your peach donut is ready to eat (6).

Advice

For a lighter preparation you can use the peach donut without butter: just replace it with 120 milliliters of seed oil. Also, if you prefer the vanilla, you can use it instead of the Grated lemon zest.

You can replace the nectarine peach with the varieties of peaches you prefer or have available, such as yellow or white peaches, the Saturnine or the snuffbox. In the case of nectarine peaches, you can use it with the whole skin on, while other types of peaches need to be peeled before being cut into small pieces.
