the peach bread it’s a soft sweet and quick, the summer variation of orange bread, a typical specialty of Sicilian tradition. It is made with fresh mixed peaches and without adding butter to the dough, for a light and very fragrant final result. Perfect for the breakfast or the nibble, the peach pan remains soft for a few days and is also very good accompanied by a scoop of ice cream or with a spoonful of semi-mounted crème fraîche. Gourmets can stuff it with cream or peach jam, or enrich the dough with chocolate or chopped dried fruits, such as nuts and almonds. How to prepare peach bread

mix the peaches

Peel the peaches, cut them into small pieces and collect them in the glass of a kitchen blender (1); Mix until you obtain a smooth puree.

Shell the eggs in a bowl and whisk them for a few minutes with the sugar and grated lemon zest (2).

Add the milk (3) and the oil while continuing to whisk.

add the peach puree

At this point, add the peach puree (4) and mix well.

sift flour

Sift the flour with the baking powder (5) and add delicately to the mixture.

Pour the dough into a buttered and floured mold about 20 cm in diameter (6). Bake the cake at 180 ° C and cook for about 35 minutes.

To check doneness, do it anyway test a toothpick: prick it in the center of the cake and, if it is dry, it means that it is ready; vice versa, continue cooking for another 5 to 10 minutes, watching the degree of browning (you can cover the surface with aluminum foil if necessary).
