the peach bread it’s a soft sweet and quick, the summer variation of orange bread, a typical specialty of Sicilian tradition. It is made with fresh mixed peaches and without adding butter to the dough, for a light and very fragrant final result. Perfect for the breakfast or the nibble, the peach pan remains soft for a few days and is also very good accompanied by a scoop of ice cream or with a spoonful of semi-mounted crème fraîche. How to prepare peach bread

Peel the peaches, cut them into small pieces and collect them in the glass of a kitchen blender (1); Mix until you obtain a smooth puree.

Shell the eggs in a bowl and whisk them for a few minutes with the sugar and grated lemon zest (2).

Add the milk (3) and the oil while continuing to whisk.

At this point, add the peach puree (4) and mix well.

Sift the flour with the baking powder (5) and add delicately to the mixture.

Pour the dough into a buttered and floured mold about 20 cm in diameter (6). Bake the cake at 180 ° C and cook for about 35 minutes.

After the baking time, take the peach cake out of the oven and let it cool. Unmold it, sprinkle the surface with plenty of icing sugar and serve (7).
Advice
To check doneness, do it anyway test a toothpick: prick it in the center of the cake and, if it is dry, it means that it is ready; vice versa, continue cooking for another 5 to 10 minutes, watching the degree of browning (you can cover the surface with aluminum foil if necessary).
Peach bread can also be served with other types of fruit which can be added to the dough in the form of mash potatoes, such as cherries, strawberries, apricots or plums.
You can also enrich the dough with chocolate chips, raisins or grain of dried fruit.
To taste, you can flavor the dough with zest of Orange grated, instead of lemon, with extract of vanilla, cinnamon powder or a shot Rum.
