Just over half an hour is enough to bring the penne with provolone, a simple and tasty first course of pasta suitable for any occasion, from the daily family meal to dinner between friends.
The recipe is very easy. The gravy is made with tomato sauce and green chillies and does not require a long cooking: play on the spicy note here by dosing the chili in powder. Once the penne has been boiled and seasoned, the dish is completed with a generous grating of provolone silana, a typical Calabrian cow’s milk cheese, with a delicate texture and a sweet and soft taste.

To prepare the penne alla provola, cut the green chillies in half, remove the seeds with the tip of a knife and then chop them irregularly. In a pan heat oil, let the finely chopped onion flavor and when it has become transparent add the peppers. As soon as they start to fry, sprinkle them with the wine, let it evaporate and add the puree. Adjust the salt, add a pinch of red pepper and cook for 15 minutes.


Meanwhile, grate the provolone with a grater with large holes. Boil the penne al dente in plenty of salted water to a boil, drain and transfer them to the pan with the sauce.

Let it flavor. Transfer the penne alla provola to individual plates and finally add the grated cheese that will melt with the heat. Top with the chopped parsley and serve.
