How to prepare: Pistachios


To prepare the pistachios, work in the bowl of the planetary mixer, using the whisk k, the pistachio cream, the flour and egg. You will need to obtain a homogeneous mixture that you will rest in the refrigerator for 20 minutes covered with cling film. Alternatively, you can easily knead by hand as for a common shortcrust pastry.


After the resting time, take the dough and using a spoon or an ice cream portioner, obtain small quantities of dough that you will mold with your hands to form “nuts”. Arrange the balls thus obtained on a baking sheet lined with parchment paper. With the end of the handle of a wooden spoon, make a central hole in order to obtain a hollow. Bake the biscuits in the oven, preheated to 160 °, for 15 minutes.

Remove from the oven and leave to cool on a cake rack. In the meantime, transfer the pistachio cream into a pastry bag with a 15 mm star nozzle. When serving, decorate each pistachio with a sprig of cream in the hollow.
