To prepare the pistachio ice cream mixture, start by melting the sugar in the milk in a pan over low heat or in a double boiler. Bring the mixture to 70 °. Off the heat, add the cream and the pistachio paste. Emulsify the mixture well with an immersion blender and let it cool completely.


Pour the cold mixture into the ice cream maker for the time necessary to achieve perfect creaming. The pistachio ice cream will be ready when it is compact and creamy!
