First, dedicate yourself to the pears: peel them with a potato peeler and place them in a saucepan with the wine, sugar, cinnamon stick, lemon zest and cloves. Put on the fire and bring to a boil. Cook from this moment for 15 minutes. The pears should soften, but not fall apart. Gently drain and set aside. Now prepare the plum cake. In a bowl, whip the eggs with the salt and sugar until the mixture is frothy and increased in volume.

Add the sifted flour, cocoa and baking powder and mix adding the milk, a little at a time. Finally add the melted butter, incorporating it in two stages.

When you have obtained a homogeneous mixture pour it into a 30 x 13 cm plum cake mold, greased and lined with parchment paper. Level and place the pears standing inside, at a regular distance from each other. If you notice that they are difficult to balance, level the base slightly with a knife. Bake in a preheated oven at 180 degrees for 50 minutes. Remove from the oven the cocoa and pear plumcake and let it cool completely before turning it out of the mold and serving sprinkled with powdered sugar to taste.
