How to prepare: Pomegranate sorbet


To make the pomegranate sorbet, first collect the water and sugar in a saucepan and bring to a boil. Let it go gently for a few minutes, then turn it off and let it cool completely. Wash the pomegranates well, cut them in half and squeeze them as if they were oranges by collecting their juice in a bowl.


Add the cold sugar syrup and mix well. Whip egg white until stiff peaks and add it to the liquid with movements from bottom to top until the mixture is homogeneous.


Transfer it to a tray and then to the freezer and let it harden for about 4 hours, stirring every half hour (or stirring only the first time after 30 minutes and then blending it with a kitchen mixer when serving).
