Prepare the potato gnocchi following our basic recipe, then dedicate yourself to the sauce: cut the fontina cheese into pieces and heat it in a bain-marie with the milk.


Stir with a wooden spoon until the fontina is completely dissolved and you have obtained a smooth and homogeneous sauce. Bring a large pot of water to a boil, add salt and add the gnocchi. Remove them with a slotted spoon as they rise to the surface and transfer them directly to the bowl with the cheese sauce.
