To prepare the quick ricotta cheesecake, start collecting the biscuits in the mixer and pulverize them. Add the melted butter, at room temperature, and blend again until blended.
Pour the mixture into 4 or 6 (depending on the size) dessert cups and level it well. Transfer to the fridge while you prepare the cream. In a bowl, mix the ricotta, well drained of its whey and sifted, with the yogurt, the icing sugar and the vanilla extract until a homogeneous mixture is obtained.
Divide the filling inside the small glasses placing it directly on the biscuit base and level. Complete with the red fruits and, if you like, a few mint leaves. You can serve the spoon cheesecake with ricotta immediately or keep it in the refrigerator until ready to eat.
