A very easy recipe to prepare that has the flavor of childhood, even if, in this version, it comes from far away. The coconut milk rice, contrary to what one might imagine, it is eaten in squares accompanied by sweet or salty condiments.

There recipe that we propose comes from Sri Lanka; it is a preparation that is served in many ways. One of the most frequent sauces with which it is accompanied is based on onion and chilli, but, being a base neutral, neither sweet nor salty, it is also pleasant though served with honey.

The coconut milk it is found in large-scale distribution or, even better, in the shops of ethnic products common in our cities. It may happen that you do not add enough: the result must have a strong coconut flavor, but you will adjust yourself in subsequent preparations. If you don’t use all the milk, you can keep it for a few days and use it, for example, to make a tasty and healthy lentil Dahl.

How to prepare: Rice with coconut milk


To make coconut milk rice, start by cooking the rice. Pour it into a pan covered with two fingers of water. The rice will cook and absorb water. The rice is ready when it unravels and reaches a consistency similar to that of our ‘polenta’. If water is absorbed but the rice is not yet well cooked, you can add hot water to continue cooking. 10 minutes before removing it from the heat (it must already be partially ‘undone’) add the coconut milk and continue cooking.


Once cooked, spread the rice in a pan, level it and let it cool completely.

Once cooled, cut the rice pudding into squares of the size you prefer and serve with the sauce you like best.
