How to prepare: Sandwiches with roast beef, rocket and pesto
Start preparing the mayonnaise that will fill the sandwiches with roast beef, rocket and pesto. Collect the egg yolks in a bowl and season with salt and pepper. Squeeze the lemon and keep the juice. Start pouring oil drop by drop, mixing the ingredients with a hand (or electric) whisk and waiting for it to be well incorporated before adding more. As soon as the mixture thickens, dilute with a squeeze of lemon and continue alternating oil and lemon until exhausted. You will need to get a well whipped sauce.
Toast the slices of bread in the oven for a few minutes. Remove from the oven and spread two of them with the pesto.
Place a few slices of roast beef on each and season with a pinch of Maldon salt and a grind of pepper. Distribute the rocket on top.
In a small bowl, mix the mayonnaise with the mustard until the mixture is smooth. Spread it in a generous layer on the two remaining slices of bread. Arrange them delicately on the already prepared rocket slices and close the sandwiches without pressing too hard.
Cut them into 4 parts with a sharp knife in order to obtain a total of 8 small sandwiches with roast beef, rocket and pesto. For convenience you can stop them with a toothpick and then serve them.
