The recipe for the artichoke and potato quiche is very simple. First clean the artichokes by filleting the stems with a potato peeler and remove the hardest outer leaves. With a clean cut remove the tips and divide them into quarters. Remove the internal hay and gradually transfer them to a bowl containing water and lemon juice. Chop the onion, fry it in a pan with a couple of tablespoons of oil and add the potatoes cut into chunks. Cook for a few minutes then add the artichokes cut into pieces. Season with salt and pepper, sprinkle with chopped fresh parsley and cook until the vegetables are soft but not undone. Once cooked, turn off the heat and cool in a large bowl. Meanwhile, beat the eggs in a bowl with the grated cheese and a pinch of salt.


Once the vegetables have cooled to room temperature, add the eggs and the smoked cheese cut into cubes; mix well and delicately. Line a round pan of about 23 cm in diameter with the puff pastry and its paper, prick the bottom of the dough with the tines of a fork and then pour the filling, leveling it.


Fold the edges of the dough inwards and brush them with the egg yolk. Bake in a preheated oven at 180 ° C for about 35 minutes. Remove from the oven the savory pie with artichokes and potatoes, let it rest for 5-10 minutes then serve it hot or lukewarm.
