Start preparing your tasty bacon pie with courgettes. After removing the ends, cut the courgettes into very thin slices lengthwise using a mandolin. Transfer them by hand to a rectangular glass dish and season with oil, vinegar, salt, pepper and fresh thyme to taste. Cover with cling film and marinate in the refrigerator for at least 20 minutes.


Meanwhile, toast the cashews in a fat-free non-stick pan and set aside. Let them cool and chop coarsely. Cut the brie into slices and take the courgettes out of the fridge, making sure to drain them well.


Unroll the puff pastry with its parchment paper on a rectangular pan of dimensions that can contain it. With a sharp knife, make an incision (not deep) 1 cm from the edge, thus creating a kind of frame. Prick the part inside the edges with the tines of a fork. Add the sliced brie and then cover with the marinated courgettes.


Then sprinkle with the grated salted ricotta with a grater with large holes and bake in a preheated oven at 200 ° for 25-30 minutes or in any case until the dough is golden brown.


Remove from the oven, add the mixed olives and dried tomatoes. Add the slices of bacon rolled up on themselves.
