Savory zucchini pancakes

The savory pancake with zucchini are a simple preparation and tasty to be proposed as an appetizer or  a main dish . The savory version of the famous Anglo-Saxon pancakes, a recipe ready in a   few minutes, to  be enjoyed as it is or served with fresh cheese.

Pancakes are increasingly popular and often present on our tables, both in the original version, smooth breakfast pancakes, accompanied by maple syrup, and in sweet or savory reinterpreted versions. As in the case of green pancakes with lime butter or stuffed pancake morsels.

With the following recipe we offer you the delicious savory pancakes with zucchini. Quick and easy to prepare, these pancakes are designed as an appetizer, to enrich a brunch or as a real vegetarian second course.

The courgettes are grated directly into the pancake paste and their delicate flavor allows for various delicious additions to the recipe. For example, a pinch of turmeric or chopped herbs such as mint or parsley. Finally, serve the savory zucchini pancakes as they are or accompanied by fresh cheese, such as ricotta or robiola, or cooked ham or smoked salmon.

INGREDIANTS
  • 100 g of flour 00
  • 200 ml of milk
  • 1 egg
  • 210 g of zucchini
  • 40 g of grated Parmesan cheese
  • 1 teaspoon of instant yeast for quiches
  • 1/2 teaspoon of baking soda
  • salt
  • pepper

To prepare savory courgette pancakes, peel the courgettes and grate them with a grater with large holes, collecting everything in a bowl.

Add the sifted flour together with the baking powder, the egg and the grated Parmesan.

Mix the ingredients, add the milk, a little at a time, and season with salt and pepper. You will need to get a batter that is not too thick, but not too fluid.

Heat a non-stick pan over medium heat and brush it with a little seed oil. Remove any excess with kitchen paper. Pour a small ladle of batter into the pan creating a circular pancake with a diameter of 8-10 cm. You can cook 2-3 at a time compatibly with the size of the pan.

 Cook for 2 minutes or until you notice large bubbles on the surface of the pancake. With a spatula, turn and continue cooking for 1 minute.

Proceed in this way until the batter is used up, taking care to brush the pan from time to time with more oil. As the pancakes are cooked, keep them warm in the oven at a maximum temperature of 100 °. Serve the savory zucchini pancakes with fresh cheese, cold cuts or whatever your imagination suggests.
