How to prepare: Skewers of mozzarella, grilled courgettes and tomatoes
Making these skewers of mozzarella, grilled zucchini and tomatoes is very simple. First, peel the courgettes and slice them thinly lengthwise with a mandolin. Grill them on a cast iron plate and transfer them to a plate. In a small bowl, mix the oil, hand-chopped basil, salt and pepper. Brush the surface of the courgettes on one side only. Roll each slice in order to obtain many cylinders.
Drain the mozzarella and set aside. Compose the skewers one at a time, inserting the ingredients in this order: a mozzarella, a dried tomato in oil, a courgette roll, a cherry tomato in the center, a courgette roll, a dried tomato in oil followed by one last mozzarella.
Serve immediately or keep the skewers in the refrigerator until ready to serve.
