How to prepare: Soft plumcake with candied oranges


Start preparing the soft plum cake with candied oranges by whipping the eggs with sugar and a pinch of salt in a planetary mixer or with a pair of electric whisk. Add the skyr, the milk, the grated orange zest and mix.


Add the sifted flour and baking powder, then mix in the oil, pouring it slowly and continuing to whip until you have obtained a smooth, creamy and homogeneous mixture.


Transfer the dough into a 23 x 11 cm loaf pan lined with parchment paper, and level. Bake in a preheated oven at 170 ° for 50-55 minutes or in any case until a toothpick inserted into the cake comes out dry. Meanwhile, cut the orange into rather thin slices, without peeling it. Prepare the syrup: put the sugar in a saucepan with the water and heat over medium heat until the sugar has dissolved completely.


Dip the orange slices in the liquid and let them cook for about 10-15 minutes over low heat. When they become tender, turn off the heat, drain the slices carefully and arrange them on a plate. Take the plum cake out of the oven and let it cool completely. Then prepare the icing: sift the icing sugar into a bowl and add a teaspoon of lemon juice at a time, stirring after each addition until the density is obtained that allows the icing to veil the spatula and not drain completely. Pour the icing on the cake after placing it on a wire rack.
