Scallops are brought to the table especially to celebrate a special occasion or during the holidays, especially those of Christmas and New Year. The spaghetti with scallop coral I’m a’creative and original idea for a first course of gourmet pasta with corals removed from other preparations, such as that of scallops with bacon and green pepper. It is therefore a easy and anti-waste recipe.
Coral is there orange part of the scallop: the more intense the color, the fresher the mollusk is. You can leave it together with the walnut in its shell to make the scallops au gratin or you can use it in other recipes in the form of sauce, as we did, preparing a kind of mayonnaise with extra virgin olive oil, vinegar and anchovies.
It is better never to consume these shellfish raw, unless you are very sure of their origin: for this reason we advise you to add hot pasta cooking water to the sauce when emulsifying it and heat it well once it is ready. You can also fry the corals for a couple of minutes before blending them.

How to prepare: Spaghetti with scallop coral


Start preparing the spaghetti with scallop coral by boiling water for the pasta. Rinse the molluscs under running water, dab and separate the coral from the walnut, which you will use for other preparations. In the jug of an immersion blender, collect the coral, the anchovies and blend by combining oil, vinegar and a little hot cooking water.


You will need to get a semi-liquid sauce. Pour it into a large pan and heat it. Once the spaghetti is ready, drain and add to the sauce, mixing everything well for a couple of minutes.

Portion the pasta on individual plates and complete with another little sauce and some desalted capers. The spaghetti with scallop coral are ready to be served.
