Steamed shrimp ravioli Cappelletti in broth

To prepare the steamed shrimp ravioli, collect the flour in a bowl, pour in the boiling water and mix quickly. Cover and let it rest for thirty minutes.

Chop the raw prawns with a knife and toss with a little grated ginger root, ½ lime juice, sesame oil, 2 tablespoons of soy sauce, chopped spring onion and four finely chopped cabbage leaves. Mix adding the starch as well.

Roll out the dough into a sheet a few millimeters thick. With a pastry cutter of about 8 cm in diameter cut many discs. Fill each disk with a knob of filling, moisten the edges and close it in a half-moon shape.

Line the steamer basket with the cabbage leaves. Arrange the ravioli inside (depending on the size of the steamer, they can be cooked in two or more moments) and place the basket on the base filled with water. Bring to a boil and cook for about 15 minutes in the saucepan without ever moving the lid until the dough is cooked.

Arrange the steamed shrimp ravioli on a serving tray. Drizzle with soy sauce and sprinkle with toasted sesame seeds. Serve.
