Preparing the strcciatella is simple. Shell the eggs in a bowl and beat them with a fork together with the Grana Padano, a sprinkling of nutmeg and a pinch of salt. Bring the broth to the boil, pour in the egg mixture and mix quickly with a whisk; reduce the heat and cook for 5 minutes, stirring constantly in order to “tear” the egg mixture well.

Take the stracciatella with a stir and serve it portioned on plates. You can complete with ground pepper, if you like.
