Although the recipe is easy, it is a dish suitable to accompany important main courses, such as roasted meat and delicious fish. The sweetness of the onions and the slight acidity of the preparation, in fact, balance the robust and savory flavors and enhance the more delicate ones.
So sweet and sour onions are perfect for a family lunch or dinner with friends. On special occasions, such as during the holidays, you can also serve them as an accompaniment to the classic Italian antipasto of cold cuts and mixed cheeses.

INGREDIANTS For Sweet and sour onions
- 800 g of borettane onions
- 1 shallot
- 1 clove of garlic
- 40 g of butter
- 3 tablespoons of granulated sugar
- 2 dl of white wine vinegar
- salt
- black pepper
HOW TO PREPARE: SWEET AND SOUR ONIONS

To prepare the glazed onions, start peeling them and soak them in cold water for 30 minutes.

Melt the butter in a fairly large saucepan and add the sugar, the shallot cut into small cubes and the minced garlic.

After 2-3 minutes, when the sugar has dissolved completely, add the drained onions and mix.

Salt, pepper, raise the heat and sprinkle with vinegar.

Let it evaporate partially then lower the heat, cover and simmer for 30 minutes. Check every now and then and sprinkle with a few spoonfuls of hot water if necessary.

At the end of cooking, let the sweet and sour onions rest for about ten minutes then transfer them to a serving dish and serve.
