How to make syrniki

In a bowl, combine the yolk, ricotta and a pinch of salt, then mix well with a fork (1).

Pour in the flour (2) and mix well. Cover the mixture and let sit in the refrigerator for 10 minutes. After this time, take the dough again and finally add the sugar.

Transfer the mixture to a previously floured work surface and make 5 balls of the same size: work them delicately, giving them a regular shape, slightly flattened in the center (3).

Heat a drizzle of oil in a pan, arrange the syrniki and cook, covered, for about 5 minutes over medium-low heat (4). Turn them over and cook for another 5 minutes.

Once cooked, turn off and let cool. Garnish the pancakes with yogurt, blueberries and powdered sugar (5), then serve.
Advice
To prevent the mixture from getting too wet, compromising the final result, use a ricotta cheese vaccine very dry: for this reason, let it drip in a colander for at least an hour.
Syrniki can be cooked in the pan as well as in the oven. In case you want bake them, we recommend that you place the dough balls in paper muffin tins and then bake them in static mode at 180 ° C for about 5-10 minutes. Check that the surface turns golden.
