It is a side dish to be prepared by boiling the vegetables and then dressing them with a tasty sauce based on anchovies, oil and butter. An absolute advice to follow when cooking thistles is to use lemon juice to prevent these thistles from darkening.

  • 2 white thistles
  • 1 lemon
  • 4 anchovy fillets
  • 1 clove of garlic
  • Butter
  • Olive oil
  • salt

1. Clean the thistles by removing the empty ribs and filaments, then cut them into small pieces and soak them in water acidulated with lemon. Then boil them in salted and acidulated water with the addition of a tablespoon of flour for at least 20 minutes, or until they become softer. 2. Meanwhile, in a pan, melt the butter with a couple of tablespoons of oil and the clove of garlic. Add the chopped anchovy fillets making them cook and reduce in cream. 2. Put the well-drained cardoons in a serving dish, season with the prepared sauce and serve. Photo by moverelbigote
