Simple and quick, they do not require any type of cooking: once emptied, the tomatoes are stuffed with a tasty cream and enveloping, made by mixing goat cheese with a pesto of sundried tomatoes and finely chopped fresh aromatic herbs. How to prepare tomatoes stuffed with goat cheese and aromatic herbs

Carefully chop the fresh aromatic herbs (1).

Prepare a light pesto of sundried tomatoes and capers, also adding a drizzle of extra virgin olive oil (2).

Add the aromatic herbs and the sundried tomato pesto with the goat cheese (3) and mix well.

Wash the tomatoes and empty them with a teaspoon (4), keeping the cap. Turn them over and let them drain well.

Fill the tomatoes with robiola cream (5) and let them rest in the refrigerator for at least 30 minutes.

Garnish the tomatoes with a few leaves of fresh basil and a drizzle of raw oil, then bring to the table and serve (6).
Advice
the goat cheese it is characterized by an intense and strongly aromatic flavor; if you wish, you can replace it with robiola, ricotta or a cream cheese spread, white or with herbs.
You can add the aromatic herbs you like or have available, and flavor the cheese-based cream with spices, such as curry, turmeric or sweet paprika.
