the watermelon and feta skewers I am a fresh aperitif and delicious, a simple and original recipe, ideal for one person summer dinner quick and light or to serve as food to eat with your fingers for a aperitif with friends. It is a preparation that combines the sweetness of watermelon with the flavor of Greek feta: the two ingredients will be cut into cubes, skewered and seasoned with extra virgin olive oil and aromatic herbs. In a few minutes you will have some last minute snacks light and irresistible.
In our recipe we used the mint, but you can also choose the basil, the Rosemary or the thyme and add some lemon juice. You can also enrich the watermelon and feta skewers with black olives pitted or with cubes of melon or slices of cucumber.

How to make watermelon and feta skewers
Cut the watermelon slices, remove the skin and seeds, being careful not to break the pulp. Get 24 watermelon cubes from the pulp (1). Get 12 cubes of the same size as the watermelon cubes (2) from the feta. Compose the skewers by putting first a cube of watermelon, then one of feta and another of watermelon. Add a mint leaf and prick with a skewer. Continue until all the ingredients are used up. Arrange them on a serving platter and season with extra virgin olive oil, salt and pepper. Your watermelon and feta skewers are ready to be served (3).
storage
It is advisable to consume the watermelon and feta skewers immediately after preparationbecause watermelon tends to release water. However, you can keep them in the fridge. for a few hours, until it’s time to serve them.
