The preparation of the Aurora cake starts with the egg whipping. In a bowl, beat the eggs and sugar with an electric mixer. When you are about half-whipped (you must have obtained a clear mixture) add the egg yolks, lightly beaten with a fork, and vanilla extract while continuing to whip.


When you have obtained a puffy mixture, which “writes” and which will be tripled in volume, add the flour and the potato starch sifted together.
