A super tasty side dish: here are the baked potatoes and onions, from the very easy recipe. This dish vegetarian it was suggested to us by a friend of ours from Calabria, so we used red Tropea onions. For family lunches or dinners.

Prepare this vegetarian recipe it is very simple: after cutting the potatoes into slices that are not too thin, they blanch for two minutes. In a baking dish they combine with the onion, with extra virgin olive oil and rosemary. Baking in the oven for 30/40 minutes, and the dish is ready.
A couple of secrets to making it so good: the first is to don’t cut the onion too thinly (as for Lyonnaise potatoes) prefer it in quarters or smaller wedges depending on the size, because it must remain crunchy and not flake. The second is of cover with a sheet of aluminum foil once baked to give a homogeneous cooking and only at the end put the grill for a couple of minutes, so as to make the surface toasted. Start making baked potatoes and onions from potatoes. Clean them, peel them with a potato peeler and cut them into slices that are not too thin. Blanch in salted water for two minutes and remove them.


Cut the Tropea onions into quarters or wedges. In a pan suitable for cooking in the oven, add the potatoes and onions. Season with plenty of oil and perfume with rosemary.


Cover with aluminum foil and bake for 30/40 minutes, until the potatoes are tender but intact. Remove the cover and put the grill on for a couple of minutes, so you get a nice crust. The baked potato and onion side dish is ready.
