HOW TO PREPARE: BASMATI RICE WITH CHICKEN CURRY AND COCONUT MILK
To make basmati rice with chicken curry and coconut milk, collect the uncooked rice in the saucepan by measuring it with a glass. Cover it with the same volume of water (the same amount of glasses) and bring it to a boil.

Cover, put the heat to low and cook for ten minutes without removing the lid and without stirring. Turn off and let it rest for another ten minutes.

Meanwhile, peel the vegetables, cut them into cubes and brown them in a little oil in a pan together with the chilli. Quickly pass the chicken breast cut into sticks in the starch and add it to the pan.

Stir and cook. Add 100 ml of water and bring to a boil. Then stir in the coconut milk, curry and salt. Also add the grated ginger and mix. When the chicken is cooked and the sauce creamy, turn off. Add the ½ lime juice and mix.

Shell the rice with a wooden spoon and transfer it to a serving dish. Pour a few spoonfuls of chicken curry and coconut milk over the rice. Finish with the coarsely chopped cashews and serve the basmati rice with chicken curry and coconut milk.
