How to prepare bloody eyes for Halloween
Put the dry biscuits in the blender and chop them until they are reduced to powder (1). Add the chopped white chocolate (2) and mix again. Also add the ricotta and continue to mix to combine everything (3).
Shape the balls with your hands, making small balls the size of a walnut (4). Place them on the baking sheet lined with parchment paper and flatten them slightly on the surface. Let harden in the refrigerator for 30 minutes. Melt the white chocolate in a double boiler (5) and dip one truffle at a time in the melted chocolate, so as to cover them completely. Immediately add the colored dragees, to form the eyes, and let stand for another 30 minutes in the refrigerator. As soon as the outer chocolate has solidified, prepare the royal icing: whip the egg white until stiff and add the icing sugar (6) while continuing to mix.
Mix until the mixture is smooth (7). Add a little red food coloring, as much as needed to make the frosting red (8). Make the grain with a pastry bag and let dry. Your bloody eyes are ready to be served (9).
It is advisable to consume bloody eyes after preparation. However, you can prepare them ahead of time, perhaps in the morning, and keep them in the fridge until ready to serve.
