Making Halloween cookies is fun. Prepare the shortcrust pastry by working with the whisk k of the planetary mixer and at low speed the egg with the salt, the cold diced butter and the sugar. Add the flour, baking powder and spices to taste.


When you have obtained a homogeneous mixture, wrap it in cling film and let it rest in the refrigerator for 30 minutes. After this time, roll out the spiced shortcrust pastry with a rolling pin into a 5 mm sheet. Using an 8 cm wide pumpkin-shaped cookie cutter, cut out many cookie shapes.


Place half of them in a pan lined with parchment paper, spacing them appropriately. Cut the other half with the tip of a small knife so as to hollow out the eyes, nose and mouth according to the trace left by the cookie cutter. Arrange these shapes on the pan, always well spaced.
