A dish that turns out to be an excellent idea for an appetizer or a light second course to be proposed for a family dinner.

First, buy high quality pumpkin: check that the skin has no soft parts, due to blows or excessive ripening. If you like, you can cook it with herbs such as rosemary, sage, thyme or marjoram. For this recipe we recommend pumpkin violin which has a sweet, firm pulp of a beautiful orange color.

Last note: this salad is excellent eaten warm but also at room temperature. The important thing is that it is not too cold, so that the seasonal vegetables keep their crunchiness.

To prepare the cod, radicchio and pumpkin salad, start by peeling the pumpkin and cutting it into cubes. Place it in a pan lined with parchment paper with oil, salt, pepper. Bake in the oven at 200 ° for 40-45 minutes. Remove from the oven and leave to cool.

Meanwhile, in a non-stick pan, heat a tablespoon of extra virgin olive oil with a clove of garlic to taste and cook the cod after cutting it into cubes. When cooked, remember to remove the garlic. Season with salt and pepper.
