That of cod with onions is an easy recipe to bring a second course of tasty fish: this version comes from Tuscany, where the gastronomic tradition boasts many stewed preparations. Here the cod is first fried and then gently cooked in a sauce made with onions and peeled tomatoes. In the summer, when they are ripe, fresh tomatoes can also be used.

How to prepare: Cod with onions


Preparing cod with onions is simple. Dry the cod, peel it, cut it into cubes of about two centimeters per side and flour them.


In a pan, heat abundant oil with the unpeeled clove of garlic and fry the pieces of cod for 5 minutes. Remove them when they are golden and pass them on absorbent kitchen paper to remove excess oil. In a large saucepan, heat two or three tablespoons of oil and add the onion, cut into thin slices, to flavor.


When the onion slices become transparent, add the chopped peeled tomatoes: mix, add salt, pepper and cook for 10-15 minutes. Add the fried cod, stir and continue cooking for another 10 minutes.

The cod with onion is ready to be served. If you like, you can add chopped fresh parsley.
