To prepare the coffee biscuits, collect the butter and sugar in the mixer bowl. Assemble the whisk K and work the two ingredients at low speed. Then add the soluble coffee dissolved in that of the mocha.


Add the seeds extracted from the vanilla pod, a pinch of salt and the sifted flour. Mix everything, always at low speed, until you get a mixture without streaks of butter. Form a loaf, wrap it in cling film and let it rest for 1 hour in the refrigerator.


After the resting time, take the dough again, take small portions of dough and, with your hands, knead them quickly without overheating them too much, giving them the shape of a sphere the size of a small walnut. Then give it an oval shape and place the biscuits by hand on a baking sheet lined with parchment paper, spacing them appropriately. With the blade of a knife on the contrary, make an incision in the middle diagonally as if to recreate a coffee bean. Bake in a preheated oven at 180 degrees for about 20 minutes.
