To prepare the gluten-free cold cheesecake with bitter orange marmalade, start from the base: melt the butter in the microwave or in a bain-marie, blend the biscuits with a mixer, then mix the two ingredients. Pour the mixture into a 14-16 cm diameter springform pan, level it with the back of a spoon and put it in the refrigerator. Go on to prepare the cream.


Soak the gelatin in the water. Meanwhile, flavor the cheese with the lemon zest. Put the cheese, cream and sugar in the mixer and whisk everything. Just heat the soaked gelatine in the microwave and mix it with a small part of the cream; add this mixture to the rest of the whipped.


Pour the mixture into the mold on the biscuit base. Level with the back of a spoon and put back in the fridge to harden for at least 4 hours. After this time, spread the bitter orange marmalade on the surface of the cake: you must obtain an even layer.
