The cold pasta with friggitelli is the fresh, summery version of the typical dish from southern Italy. In our recipe the pasta is cooled in a bowl with water and ice, which will block them al dente cuisine keeping all the flavor unchanged, then seasoned with friggitelli and cherry tomatoes quickly sautéed in a pan. Boil the pasta in slightly salted boiling water, then drain it al dente and place the colander over a saucepan with cold water and ice cubes (1). Let it cool down.

Meanwhile, wash the friggitelli and peel them, removing the stem and central seeds. Then cut them into rings (2).

Heat a drizzle of oil in a pan, add the friggitelli (3), salt and cook over high heat for a few minutes.

Add the tomatoes, washed and cut in half (4), and sauté them in a pan for only 1 minute.

Transfer the cold pasta to a bowl and add the pitted olives (5).

Add the vegetables (6) and mix well.

Flavor with the chopped basil and season with a drizzle of crude oil and a grind of pepper (7).
