The cold pasta with lemon, olives and tuna it’s a single dish fresh and fragrant, perfect for summer. In this season, cereal salads are a real must: they can never be missing on the table, for a lunch in Beach or in the trash picnic. In our version, the pasta is seasoned with tuna fillets, green olives, cherry tomatoes and aemulsion made with lemon juice and extra virgin olive oil, which replaces the classic mayonnaise, for an equally tasty but lighter and digestible. Clean the spring onion, cut it finely and soak it in cold water for half an hour, to make it more digestible and sweet (1).

Boil the pasta in boiling, lightly salted water, then drain it al dente and transfer it to a bowl. Place it on another container, containing cold water and ice, and let it cool (2).

Wash the cherry tomatoes and cut them in half (3).

Collect the cherry tomatoes in a bowl and add the well-drained tuna of the preservative oil (4).

Squeeze the lemon juice (6) and emulsify it with 3-4 tablespoons of oil and a pinch of salt.

Advice

To get a Pasta tasty and perfectly al dente, we advise you to follow the trick suggested in the recipe; alternatively, you can drain the pasta, sprinkle it with a drizzle of oil and then pour it into a saucepan wide by spreading it well. At this point, cover it with a sheet of cling film and let it cool, stirring occasionally.
