The crumbled with peaches is a simple and delicious dessert, a summer cake fresh and delicious made from fresh peaches, but without adding cream. The wrapper will be made from shortcrust pastry crumbs, hence the name of the cake, which will give the cake a look crispy surface, contrary to sweet and fragrant filling made from fresh seasonal peaches: in our recipe, we used the nectarine peaches, but you can choose the varieties of peaches you prefer. Once ready, take the opportunity to breakfast or the nibble or serve it as dessert, perhaps accompanied by whipped cream or a scoop of ice cream. Here’s how to prepare it.
How to prepare crumbled peaches
To make the shortcrust pastry, put the sifted flour, salt, sugar, grated lemon zest in a bowl and mix. Add the butter in small pieces and the egg, continuing to mix with your hands (1), but without kneading, so as to obtain a crumbled mixture (2). Pour half of the mixture into a buttered and floured mold 24 centimeters in diameter and press with your hands or with the back of a spoon, also making the edges (3).
Wash the peaches and cut them in half (4), remove the hazelnuts and cut them into slices. Arrange them on the pie shell, overlapping them lightly on top of each other. Cover with the rest of the dough, without crushing it (5). Bake in a preheated oven at 180 ° C for about 30 minutes or until the surface is golden brown. Once ready, let it cool before unmolding it. Your peach crumb is ready to be served (6). If you prefer, you can sprinkle it with powdered sugar.
For the preparation of this dessert, you can also use the peaches in syrup, especially if you want to prepare it out of season. Your peach crumble will always be very good.
You can enrich your peach breadcrumbs with the addition of Amaretti cookies, or make the filling creamier by adding ricotta cheese, mascarpone cheese or any cream cheese of your choice.
