To make the egg white omelette with zucchini and shrimps, start by drying the shrimps from their possible storage liquid by dabbing them with absorbent paper. Trim the courgettes, then cut them into matches of 2-3 centimeters in length. Cook them in a pan with a drizzle of oil for 5 minutes to keep them crunchy. When cooked, season with salt and pepper.


Gather the egg whites in a bowl and beat them with a fork: they must be slightly whipped.


Add the zucchini and shrimp to the egg whites and mix well. Heat a drizzle of oil in a non-stick pan, when hot, add the mix of egg whites, courgettes and shrimps. Cook for 5 minutes without stirring. Using a lid or plate, turn the omelette over and cook for 5 minutes on the other side as well.
