The free cake, just as the name implies, is a free cake, free from gluten, sugar and fat. Fruit is the indisputable protagonist of this dessert which represents the meeting point for different tastes and culinary needs. Rice milk and starch (always rice or corn) are the ingredients needed to combine the different types of fruit. Let’s find out how to make this delicious dessert!

  • 4 apples
  • 150 gr of sultanas
  • 200 grams of brown rice flour
  • 50 grams of starch (rice, corn or starch)
  • 1/2 sachet of vegan yeast
  • 1 tablespoon of carob pulp flour
  • cinnamon to taste
  • the juice of one lemon
  • rice milk to taste

Preparation

  1. Pour some lukewarm water into a bowl and let the raisins soak for a few hours, then rinse and dry.

  2. Peel the apples and cut them into small pieces; then pour them into a non-stick pan and cook them with the juice of half a lemon and a little water.
  3. Keep the heat high and let it go for about 10 minutes, if necessary we advise you to add more water.
  4. As soon as the apples are cooked, using a fork, mash them and add a little rice milk.

  5. In a clean bowl, mix the rice and carob flour, starch, yeast, lemon zest, cinnamon and raisins.
  6. With a wooden spoon, mix all the ingredients so as to flour the raisins well.
  7. Then add the apple puree and rice milk to this mixture, which will help make the dough creamy. During this step, be careful not to make the dough too liquid.

  8. Line a baking sheet with paper and pour the mixture made, with the help of a spoon, level everything.
  9. Bake everything for 40 minutes at 200 °.
  10. Before baking you can garnish the cake with apple and banana slices.
