  • 12 slices of brioche
  • 4 eggs at room temperature
  • 60 g of granulated sugar
  • 1/2 vanilla bean
  • 450 ml of whole milk
  • 80 g of blueberries
  • flakes of butter for cooking
  • TO SERVE
  • Maple syrup
  • powdered sugar
  • 40 g of fresh blueberries

To prepare your French toast in the oven, arrange the slices of brioche staggered inside the pan so that they are slightly inclined. With a whisk, beat the eggs together with the sugar and the seeds of the vanilla bean.

When you have obtained a homogeneous mixture, add the milk and pour it all over the brioche slices with the help of a ladle.

Spread the blueberries, cover with cling film and let it rest for at least 6 hours in the refrigerator. After this time, sprinkle the French with the flakes of butter and bake in a preheated oven at 180 degrees for about 30 minutes. The liquid must have dried. Remove from the oven and immediately serve the French toast sprinkling with sifted icing sugar, fresh blueberries and maple syrup to taste.
