Form a loaf, wrap it in cling film and let it rest in the refrigerator for 1 hour. In the meantime, dedicate yourself to the custard. Heat the milk in a saucepan, together with the lemon zest; Collect the egg yolks with the granulated sugar in a bowl and work them briefly with a hand whisk.

Add sifted cornstarch and stir until combined. Pour the milk over the mixture, passing it through a colander and stirring constantly.

Now place the mixture in a saucepan over the heat, over low heat, and stir continuously until the cream has thickened. Transfer it to a clean bowl, add a knob of butter and mix with a whisk to melt the butter, until you get a smooth and shiny cream. Cover with cling film and allow to cool. Roll out the shortcrust pastry with a rolling pin into a sheet of about 5 mm thick and with it line a non-stick tart mold, 24 cm in diameter. Prick the base with the tines of a fork.
