Cook the spelled pearl in salted boiling water (1), drain it al dente and spread it out on a serving dish, so as to let it cool quickly without running it under water (2). Put it in a large bowl, adding 1 tablespoon of extra virgin olive oil (3).

Meanwhile, cut the onion into rings (4) and put it in a bowl with ice water so that it remains crunchy and loses its spicy taste. Wash the cherry tomatoes and cut them into 4 parts (5). Rinse the capers and drain them (6).

Add the cherry tomatoes, chopped feta, capers, olives, well-drained onion, salt, pepper to the bowl with the spelled and mix. Drizzle with extra virgin olive oil, add the basil and let stand for ten minutes before serving. Your Greek spelled salad is ready to eat.

Advice

If you want to use the shelled spelled, you will have to rinse it well under running water, leave it soak for 12 hours in water and then cook it.
