Preparing these lentils and zucchini is quick and easy. First wash and cut the courgettes into slices, using a knife or a mandolin. In a non-stick pan, heat two tablespoons of oil, season the garlic and as soon as it turns gold, remove it. Add the courgettes and cook for ten minutes or until golden and slightly crunchy.

At this point, add the well-drained lentils, salt, pepper and cook for another five minutes. Turn off, add the basil leaves and serve your lentils and courgettes.
