To make the mango and rich cream cake, prepare a gluten-free shortcrust pastry following the basic recipe. Add the grated zest of half a lemon to the indicated ingredients. You can also prepare the pasta in advance, as it needs a 2-hour rest in the fridge. For the cream: collect the cream cheese, ricotta and sugar in a bowl and mix the ingredients with a hand whisk. Then add the two egg yolks, the seeds extracted from the vanilla bean and the finely grated lemon zest. Work very well with the whisk until you get a smooth and homogeneous mixture that you will keep aside.

After the resting time of the dough, take it back from the refrigerator and roll it out to a thickness of about 3 millimeters, on a sheet of parchment paper which will then facilitate the passage into the pan. Transfer the disc thus obtained into a tart mold, possibly with a removable bottom, with a diameter of 22 cm.

Transfer the cake to a preheated oven at 180 ° and cook for 35 minutes or in any case until the dough and the filling have taken on a golden color. The filling will tend to increase in volume during cooking, but once out of the oven it will deflate. Let the tart cool completely before turning it out. When serving, proceed with the fruit decoration: peel the mangoes and remove the large central stone, cutting the pulp into thin slices.
