THE pineapple and coconut popsicles they are gods delicious candy And refreshing, perfect for the warm season and prepared with only 2 ingredients. Simple and delicious, they contain no added sugars or thickeners: to make them, you will need, in addition to pineapple and coconut milk, small glasses and popsicle sticks. You can serve them comand snack for children, but also as fresh dessert after dinner. Here’s how to achieve them perfectly.
How to make pineapple and coconut popsicles

Start by equipping yourself with a very sharp knife to cut the pineapple; place a kitchen towel under the cutting board to make sure it is stable. Start by removing the ends, then put the pineapple back vertically and cut the shell by cutting the skin from top to bottom (1).

Proceed by removing all the skin and then cut the pulp into large pieces; put the pineapple pieces in the blender (2) and let run, until reduced to a thick puree.

Pour this puree into 300 ml cups, filling between half and two-thirds. Take a 50ml plastic cup and push it into the middle of the mash, then add a little water (3) to hold it in place.

Put it in the freezer for about 4 hours: the mash should not freeze completely, but only harden. Then carefully remove the plastic cup (4).

In the groove drawn by the cup pour coconut milk (5).

Fill the glass with the rest of the coconut milk, leaving 2-3 mm free from the rim (6). Freeze for an hour or until the coconut milk forms an iced crust.

Insert the wooden popsicle sticks (7) and freeze them overnight.

The next day, take the popsicles out of the freezer, place them for a few seconds in a bowl with ice, or run a little running water around the glass for a few minutes. Then remove the glass (8) and serve.
Advice
For this recipe we used a whole pineapple: if you prefer to use the pulp already cut, drain it well before mixing it.
the coconut milk it is ideal for making these frozen popsicles, thanks to its density and delicate flavor: if you prefer a more substantial consistency, you can use coconut cream. If you want sweeter popsicles, you can mix 1 teaspoon of coconut with coconut honey you hate Maple syrup.
Alternatively, combine the pineapple with ½ cup of Greek yogurt⅓ cup of coconut milk and ½ teaspoon of vanilla extract. Before serving, you can garnish the pineapple coconut popsicles with coconut flakes.
If you have trouble remove the popsicles from the mold plastic, slide theLuke warm water for a few minutes on the surface of the glasses. Alternatively, you can use a popsicle mold: you can find them in specialty candy stores, or online.
storage
The popsicles can be stored in the freezer for up to 3 months. Make sure you keep them in a sealable plastic bag or airtight container.
